How To Make It Last

  • Cook on low to medium heat and add a little oil before the pan gets hot. Use wooden or silicone tools — no metal spatulas, scouring pads or aerosol sprays, which leave a sticky film. Let it cool before washing.

    Non-Stick & Ceramic

    Care note

  • Wash with hot water and a brush, dry on the hob for a minute, then wipe a few drops of oil over the surface. Skip the dishwasher and long soaks. Rust spot? Scrub it off, dry, oil and heat to re-season.

    Cast Iron & Carbon Steel

    Care note

  • Warm the pan before adding oil and food releases on its own. Rainbow marks and white spots lift with a splash of white vinegar; burnt-on bits soften with bicarbonate of soda and a little water.

    Stainless Steel

    Care note

  • Hand wash and dry straight away — dishwashers dull and chip edges. Cut on wood or plastic, never glass or stone. Hone every few uses and sharpen properly two to four times a year.

    Kitchen Knives

    Care note

  • "Dishwasher safe" still means hand washing keeps a coating longer. Glass lids and plastic handles often have a lower oven limit than the pan itself — we list the lower figure on each card.

    Oven & Dishwasher

    Care note

  • Stack coated pans with a cloth or pan protector between them and rack the lids. Keep knives in a block, on a magnetic strip or in edge guards — loose in a drawer is how tips snap.
